As a research winery, we're constantly working to revive historical recipes of wines, ciders and meads that speak for a time one can only read about. We bring history to life in a way that can be tasted and shared, discussed and debated. Those recipes that we find successful, in all their iterations, will be offered here in limited quantities while they last.

Blackledge Winery 1845 Golden Russet Cider2015 GOLDEN RUSSET CIDER
The Golden Russet is an early American apple that traces its roots to the 18th century. Officially recognized by 1845, it's prized as a cider apple with natural sugar that gives an alcohol content over 8%. Our cider is fermented completely dry using the apples' natural yeast with NOTHING added. This is by far one of the cleanest apple ciders we've ever tasted, bulk-aged for over a year and presenting itself more like a full-bodied white wine than a traditional cider.

Holt's 95 Cyser ~ Blackledge Winery2015 HOLT'S 95 CYSER
When one blends wildflower honey with cider prior to fermentation, you get what's called a "cyser". The addition of the honey sugars increases the alcohol yield, giving this a higher ABV than a typical cider. The recipe is taken from the Agricultural Survey of Lancaster County, England published by John Holt in 1795. Barrel aged in an apple brandy barrel and finished just off-dry, this cyser cuts a fine balance of the heirloom apples' character tempered by just the right amount of wildflower honey.

Blackledge Winery ~ Fisher's 58 Ginger Cider2015 FISHER'S 58 GINGER CIDER *
A cider recipe taken from George Fisher's 1758 The American Instructor and fermented using local early Pennsylvania heirloom cider apples, ginger, raisins, sugar and ale yeast. We decided to bulk-age this batch for a year to let it really develop, and the result is a more mellow ginger flavor profile. Course filtered and finished just off-dry.

Blackledge Winery~ Eliza Smith's Mead2016 ELIZA SMITH'S MEAD
We had stashed a few of these bottles for the holidays, and there are just a handful of them left so we decided to release them. A mead recipe taken from the 1739 edition Eliza Smith's book "The Complete Housewife." Wildflower honey, lemon and spices fermented with ale yeast. Cold crashed and finished slightly sweet, no sulfites are added at any point in the fermentation or bottling process. Extremely limited quantity.

Blackledge Winery Eliza's 28 Cider2015 ELIZA'S 28 BARREL-AGED CIDER *
Based on a cider recipe from Eliza Smith's 1728 The Compleat Housewife and fermented using fresh cider from local early Pennsylvania heirloom cider apples, raisins, sugar and natural yeast. Barrel-aged in a fresh apple brandy cask, this is a smooth, crisp traditional cider that's dry, still and unfiltered. No sulfites are added at any point in the fermentation or bottling process.

Blackledge Winery~ Penn's 74 Cider2015 PENN'S 74 CIDER *
Based on a cider recipe from William Penn's wife Gulielma's 1674 receipt (recipe) book. It's fermented using fresh cider from local early Pennsylvania heirloom cider apples, raisins, spices and natural yeast. This is a smooth, crisp traditional cider that's dry, still and unfiltered. No sulfites are added at any point in the fermentation or bottling process.

* The U S Government considers these to be an "apple raisin wine" and an "apple raisin wine with spice" even though the inclusion of raisins and spice make up less than one half of one percent of the total ingredients. While this wording is required by law to appear on the labels, history will always refer to them as ciders.
